1. Masala fish
Chop the fish into small pieces and combine all ingredients in a mixing bowl.

Heat the oil in the big deep frying pan. Fry the onions until they have a deep brown colour. Cook for at least 20 minutes, adding water as needed to deglaze the pan of caramelisation.
Cook for 2 minutes after adding the vindaloo curry paste, add the tomatoes and cook for another 30 minutes.
Stir in the water and allow the sauce to simmer for 10 minutes, stirring occasionally. Cook for 10 minutes, flipping the fish carefully until it is cooked through.
