1. Masala fish

Chop the fish into small pieces and combine all ingredients in a mixing bowl.

Place the fish in the mixture and coat it completely.

Heat a deep-frying pan with oil to medium-high heat, being careful not to overheat the oil. Cook for 5 minutes on one side, or until golden brown.

Stir in the water and allow the sauce to simmer for 10 minutes, stirring occasionally. Cook for 10 minutes, flipping the fish carefully until it is cooked through.

Chilli Prawns are a classic Indo-Chinese meal that is both tasty and satisfying.

In a frying pan, heat the oil on low heat. Cook, occasionally stirring, for 10-15 minutes over low heat, until onions are caramelised.

Put the prawns, sugar, and tomato paste in a mixing bowl. Cook for 4-5 minutes, uncovered until the sauce is thick enough to coat the prawns.

Sprinkle with coriander and serve with Steam Rice or Saffron Rice.

4. Fish Curry

Fish curry is one of the most diverse fish recipes. Each region in the country prepares fish curry differently.

5. Prawn Malai

Heat the oil in a pan, add the chopped onions, bay leaf, and dried red chilli, and add ginger-garlic paste, sugar, cinnamon stick, cloves, and cardamom.

Add the coconut milk to the pan and cook on low heat for 5 minutes. Add the turmeric powder, red chilli powder, and cumin powder.

In a separate bowl, mix the prawns and the curry sauce. Add the garam masala, cover the pan with a lid, and cook on medium heat for 4 minutes.

Transfer to a serving bowl, trim with chopped coriander and serve hot with steaming rice.
